Spiced Eggplant Stew

We’ve spiced things up Indian style for this deliciously hearty vegetable stew. Low-gi chickpeas and lentils are stewed with eggplant and pumpkin in an aromatically spiced tomato base. It’s then lavishly ladled over a bed of high-fibre cauliflower rice and garnished with almonds and coriander.
